It's much more complicated than that. You can teach an entire semester on fat metabolism alone. To put it simply, calories in doesn't always equal calories out. We can store fat far more efficiently than we can burn it. Also it's not an exact 50/50 split. You're right though. There will be some more calories not accounted for. Fat in its storage form is very stable. It does not like to react. We have to turn it in to something usable, and that takes energy.
