No one is noticing your posture, talking speed or etc. Unless you're doing something extremely out of the normal. Only you're noticing these details. No one else cares. I will say it was much easier pre-smart phone days where everyone was forced to interact unless you wanted to stare at the wall or a muted TV screen. Also try restaurants alone first. I used to go a my local Pho place every Sunday and it was very relaxing but became very social once I became a regular.

If you can stomach it, just ask about college and career prospects. It seems to kill any romantic mood so you have to change the subject at some point but it's good for making them feel comfortable and keeps the conversation flowing.
