The company actually processing the payment takes a cut, the credit card company (or bank, possibly both- in the case of debit cards) takes a cut. So the $10 "bill" you pay actually only gets $9 to the merchant. To make up for that "loss" (which happens on every transaction) prices rise over time - not only at individual merchants, but across their supply chain, and on upwards.
