Looks like you saved yourself from crazy. It's probably a self defense mechanism she set up for herself mentally. I once snapped like this myself when I was at a huge moment of cognitive dissonance in front of my parents.

I disagree tofu. I find that too much sarcasm can become an annoyance. Sure, once in a while its great, but to say that it allows a vehicle to showcase ones personality is pushing the value of sarcasm too far. There are many other ways including genuinely good humor, positive attitude, etc.
