Chiming in to add that anxiety is also a factor. My SO trusts me and has zero reason to think I'd cheat, but that's what the disease does to people. I can either play the victim and whine and we both feel bad, or I can do it and everyone's happy.

No, it means different things for different people but it boils down to not identifying as strictly male or strictly female. Think of gender as a sliding scale-- some people feel that theirs is static but not fully binary, others feels theirs is dynamic and changes from day to day. No one I've ever spoken to have based their GI on gender roles alone.
