The guy in the video is me! I agree, I prefer stovetop to oven and unilaterally searing salmon would be disgusting. However, I chose to make the video all stovetop for three reasons: Beginner cooks never get their goddamn pans hot enough no matter how much I tell them to. Yes! I should have specified: I always have the girl cook with me. It matters less about what you cook and more about how your interact with girls in the kitchen. If you really really want to learn everything about cooking, read "On Food and Cooking" by Harold McGee. Its encyclopedic but a must read for anyone serious about food. As for learning the essentials, you should make a list of what exact skills you want to learn. I can find you decent tutorials on those skills. There's lots of books that teach the essentials of cooking, but I find none of them can teach as well as youtube video tutorials. If you want to learn all your fundamentals well at once, …

You couldn't be more right-- that self-conscious "fat" feeling girls get after eating ruins prospects of sex incredibly fast. Smaller servings is the best way of dealing with this imo. I've learned not to freak out in these situations: there could be a number of reasons she hasnt replied: busy, cranky, not feeling well, checked her phone and forgot, etc. I wouldn't worry too much. It sounds like you guys had a good interaction; she will remember the date. If you call her in a week or two she might be in a totally different mood and more receptive.
