Everything is a power play with women. But you should never talk about it openly. You ended the argument a bit bluntly but you got your point across. So now stop second guessing yourself. You should not anchor your self confidence on some external "thing" such as a woman's interest in you. It should come from within, it should be your inner core -- the one where NOBODY can get in. Don't think she doesn't notice the power she has over you by uttering a sigle phrase (aka pressing your button), which by the way makes you extremely unattractive.

I hate texting and try to keep phone calls to a minimum (1 minute? just tell me whatever is really necessary). First date? Always go for something simple. Coffee / Tea. Next dates? I have a rule that I lay out at the start: If I invite you out, then I pay. If YOU invite ME out, then YOU pay. It's a very good point that you make, one that more men need to understand. However, trying to explain this to women I think is completely pointless, in the sense that it won't help anybody.
