Chivalry in its nature puts girls on a pedestal. It's important to be polite and escalate but not to let her be "the object of your desires" or let her control what you're after. A problem I found while studying in Madrid was that a lot of Spaniards, though very outgoing generally still like to stick to their groups of friends. These groups of friends are lifelong friends so it's hard to just approach a group of them as an outsider- though certainly not impossible. I'd try wedging yourself in with a group by setting up intercambios and stuff. Good luck with Spanish girls, I spoke Spanish fluently and they still didn't give me the time of day though Italians and Americans, etc did.
