Good on you for giving up on her man. I'm a decent weight for my height (looking to add on some more pounds) and have been lifting since December. Maybe it's a subconscious thing? Maybe you're initiating eye-contact or portraying a more powerful presence around these girls you're most interested in? Women generally try to avoid rejection for the most part, so if you're not really showing them you're into them, odds are the majority won't show it back. As for when you're on your nights out, I'd probably say you're more interested in what the girls that are your type have to say, and it shows in a good way.

I'd maybe say something they probably haven't heard 10 times already to avoid the eye rolls hahaha, nah but I don't personally believe there's anything wrong to say, it's more the way you say it; confidently, you being interested in the reply, etc. I know what you're saying man, I've been in a ton of situations where I've got the hamster wheel going and I can't think of what to say, but you kind of get better at thinking on the spot as you go.

Try and be more observant of your surroundings and make an opener off of that. I like to initiate conversations with a comment about something they're involved in that isn't private or inappropriate for me to bud into or something else situational. I feel like canned lines are boring because they're not what you actually felt like saying in the moment, thus making it difficult to continue a conversation you're actually invested in if the opener doesn't fall flat.

I think the only thing you're doing wrong is doing something for the sole purpose of trying to find women. It's good that you're taking a step and trying to get out there more, but I think you should try to do things you're actually interested in. Keep it short and simple, as already mentioned, texting shouldn't be your main form of communication, that should ideally be done in person. At the end of the day, see it as a dance; if she's really into the texting and you're down with that, mirror her steps. A good dancer is conscious of the moves their partner is making!
