This whole situation would have been avoided if you led from the outset. You needed to lead and say you'd take the girl at the start, rather than George. George thought you were a passive beta after this. Then you needed to lead your girl to where you wanted to go, rather than just go along with her idea. If you'd established a dominant leader frame at the beginning she would have gone with you when you asked.

It does matter on Tinder, try saying just "Hey" and seeing how many responses you get. It doesn't really matter in person because she can tell so much more about you from body language, tonality etc.

You need to escalate physically to show your intention. If a girl still makes a "friend" comment even after you do this, you need to explain that you're attracted to her and would rather be nothing than friends.
