I have a mentor at work who encourages and compliments and congratulates me and its the strangest experience to get this kind of treatment. There are so many ways to work this question in. When she mentions an activity, you can ask "was it fun w your boyfriend?" when she mentions spending a lot of time at work, say "I bet your boyfriend misses you." you get the idea? if she's into you and single, you better believe she's gonna deny the existence of that boyfriend that you mentioned.
