I think you nailed it right on the head. Physical escalation really does go hand in hand with conversational escalation. Do you notice your stress levels in these situations? Maybe practice some subtle calming techniques (lengthen your breathing, relax the shoulders, etc) while you're talking to her. It may clear whatever chatter's in your head so you can focus on the convo and get into the flow.

Hope you feel better soon! Being heartbroken has real, established impacts on the body (see Takotsubo cardiomyopathy sometime). Perhaps now is a good time to really listen to your mind and your body. Pay attention to your thoughts without negativity or dismissal and allow yourself time to ask why you feel the way you do. Heartbreaks are painful, yet enlightening in the handling process.

Eye contact and feeling open helps. You really need to channel that being receptive feeling. If you're already in a convo, casually touching; for instance, casually placing your hand on his knee to emphasize certain points, or gently touching his bicep while pointing at something else. "Hey!" touches knee "I dropped my notebook, would you mind ?" Also, just genuinely listening and asking questions seems to work. Everyone loves talking about themselves to some extent.
