Men are complex individuals with plenty of stigmas, social issues and struggles like many others. Just because men aren't crying from the rooftops about their struggles doesn't mean that they are having a great day, week, month or year. It's men's day. Take a moment to think about the weight they carry and obstacles they face every day. Maybe show them some gratitude or appreciation some way. Who knows, someone might really need it more than you know.

Women are said to be able to perform pretty well in the STEM fields and have not pursued them. When there were benefits given to help women into STEM it still didn't grow significantly. Woman do perform well in STEM. Look it up.

Just ignore the issue and business as usual unless it gets brought up to you. I would also try giving her some space to initiate again. If she starts something with you this time you know she is reciprocating, otherwise, waitresses usually deal with guys hitting on them all the time and she might have already forgotten it or shrugged it off as another tuesday or whatever.
