Why is this surprising to you or anyone else? Women come on tinder for attention or to fuck hot guys. She can get below average guy anytime she wants. Its obviously not working for you since you are not hot, dont have professional photos, dont show value on pics or bio. I would delete it and forget about tinder. Ok seems you really want this ltr to survive. Lead her as alpha of that ltr, let her know that both of you are starting to workout and run, dont mention her being fat or anything. Replace junk food with healthy food. If you manage this for few months you will bond even more and start fucking again.
