That's a case of misrepresenting the data, but it doesn't negate the valid conclusion that a combination of processed and processed meat is linked to health problems. I hate to break it to you, but vegans don't actually swap out meat and cheese for fruit. As such they don't consume more sugar and starch and in fact they generally have lower blood pressure and lower incidence of diabetes than non-vegans.
