I personally find that exclamationmarks expresses that you are unsure of whether your i.e. plan for the date is good enough, so you try to exhaggerate the plan to feel better, or lure out a response to find out if it is any good after all. These are in my book signs of inconfidence, but that's just my take on texting game. On a sidenote; I don't think that using an exclamationmark or two has ever made me lose a date.
