I can attest that the traditional everyday Cantonese diet (for people that had food at all) is white rice with a ton of fresh vegetables, a thin herb soup, and lesser amounts of meat and fish cooked in ways that emphasize flavor to stretch it out. A small bowl of rice or two per meal sounds about right from what I've observed, with the side dishes mainly being there to make the rice tolerable. Lard with rice used to be a traditional peasant dish.

I just went to Europe and took public transit only for a week, walking about 5 miles a day to explore cities and walk between stops. Many many people riding bikes as well. I hike every other weekend at least and live in a place with some legit mountains, and that still did a number on my calves. Five days in, they felt sore to the bone and I just had to force myself to take a day of laying around close to my hotel to recover. I've been to Asia and it's the same way.
