Regardless of who it affects most, it has nothing to do with the definition. A definition explains as concisely as possible the meaning of a word and in this case you don't have to explain who experiences more sexism to explain its meaning. It's superfluous, it doesn't give clearer meaning to the word sexism, and it undermines men who experience sexism, belittling their discrimination.

I suppose I should clarify that I think it's inappropriate to focus a definition on one half of what it applies to. Sexism can typically be against women but it can also typically be against men depending on context and what aspects of sexism you are including under what is a broad umbrella term for all discrimation based on gender.
