Yeah I can relate. The picking the best feeling thought thing requires some focus. Your mind already has momentum with where it's used to going. You have to consciously choose thoughts that are believable and simultaneously feel good. When a thought comes that doesn't feel good you just cut it off and pick a new one. If reminiscing doesn't work for you try imagining. Imagine a scenario or interaction that makes you feel good.

I like this, I'd almost rather get stood up cause then I know she's forgetfull or not punctual and I'd rather not deal with that. If she shows up without needing a reminder or reminds me, it shows she's on top of things.

Well you have to have boundaries for yourself, what kind of behavior you'll accept from other people. So say whatever would come naturally to you with the mind frame that her expecting you to pay is presumptuous and impolite. For me I'd probably look at the check and be like "Whaaat?" Then look her in the eyes, grin, and slide the check back across the table.
