I used to work in a pizza shop so I am a pizza snob. Anyway I insist on making my own dough and I stretch it on my kitchen table. The GF was very impressed with my forearms while I was stretching the dough. Was good feels even if she was less enthused than I'd hoped she'd be about my dough tossing skills :/

You don't, you accept that they are a special flavor of crazy and you turn around and walk away. If you really want to proceed, then you start out by making a connection, letting you know you like her, add in something about how special she is to you, talk about sex, and if she's open to it, you'll be in her pants in no time. I don't need to prove anything to myself. I know who I am and who i want to be. My problem is that my job (nursing) is difficult to do with any sort of ego or over confidence. If you "fake it till you make it" and you get it wrong, somebody dies.

My problem is that I'm a nurse. I'm responsible for people's lives. I can't be over confident or not give a Fuck because when you do that people die. I'm trying to balance my self confidence with caution so that I can be the person I want do be, and still do a good job.

The number one problem I have with approaching girls at work, no matter where it is, is that they're almost always being payed to be nice to you. Those "IOI's" could easily be her way of saying "thanks for that tip, I'd like another please." Or even simply "you're a regular and a decent human, I'm gonna make sure you come back often so my day doesn't suck as bad." If you're thinking she might want to kiss you, I've noticed that staring at her lips will give enough of a hint to her. In my experience either the woman will stare back at your lips and often slightly open her mouth or moisten her lips, or she'll pull back or turn her head a bit. Depending on her reaction you either go for it without hesitation, or back off and give her her space. She may still give you some other sign that she wants to kiss later on.

I tell dumb stories too. Idk why, but I guess I just can't formulate a story. I've gotten the old "do you tell that one at parties" line half a hundred times. Me personally. I've done simular things when I either a: suddenly realize I'm not that into a girl or b: suddenly realize I'm being a prick to someone I actually like. But just to clarify, I am in no way alpha, so I don't know if my comments translate. Bottom line, just talk with him about it. Worst case he doesn't like you, but at least you know where you stand.
