I mean, there's nothing technically wrong with what you said - it's what you felt after all. but at the same time, I would probably feel a bit hurt if I was the girl who received a text like that. it sort of sends the message that their company / time spent together is only meaningful if it leads to something. i think it's always helpful to be on good terms with others when you can, so just something to consider ~

tbh this advice might work if you were like making out or something, but if a guy slowly and sensually complimented me while being really turned on I'd be like !!!! lol. i think a better way would be keeping it fun and lighthearted and probably something you could weave into a conversation like "hey - love the shirt you're wearing! are you a xyz fan?" haha.

next time, start off with something funny that starts a conversation. it's really easy to dead-end with a "hey" "hey" "how are you" "fine, you?" "yeah.. fine." kind of conversation so some people will avoid responding just for that reason

8 and 9 are the most important to me. humor is super attractive and if you can make me laugh you already have a piece of my heart. <3 and for 9.. - I wouldn't say I give tests (tbh that's kinda an unhealthy thing to do), but I'm also kind of a complain rant/venter about whatever drama I have going in my life so it's super important to me that my s/o can just kinda smile and listen (and maybe even tune me out idec haha) without getting stressed / feeling like they need to get emotionally involved

to answer your question - I think she did have a boyfriend. I have said this in situations both where I was seeing someone and where I was not seeing someone - and for me at least, my body language is a lot more tense and I feel a great deal of stress when I am saying it as a lie. the exchange in person seemed fine and sounds like she was into you, but imo the convo on instagram dm's was a bit awkward and dead ended. I think if you'd said something funny or goofy she might have laughed and been open to having a convo w / you. nbd, OP - just keep it fun and light hearted when you first start out chatting with someone haha
