I can 100% relate to you OP and verify that I had almost the exact same story. Beta as fuck, depressed, brain fog - all that went away when I cut gluten out of my diet. I had the sensitivity too - soy sauce was enough to put me in a depressed funk for 2 days. However now it's 3 years later and I can tolerate gluten even if I know it has shitty effects.
