I don't lose weight unless I stop eating carbohydrates. I'm just like you otherwise: I could overcount my eating, undercount my exercise, run daily deficits and only lose maybe a pound or two per month. When I quit carbohydrates (6 days out of 7) and my macros go 70% kcal from fat, 30% kcal from protein, ~0% kcal from carbs, I can literally sit on my morbidly obese ass and lose 30-40 pounds in 6 months.
