What seems like the best (and most obvious) strategy is to just mind his own business and be on his best behavior while at the store. If she comes unhinged, let it be 100% her own show. Then, if management gets involved, just politely and factually explain what's happening. Don't demand any action toward her - just ask if you should stop shopping there, or if there is any way to know days when she won't be there so there won't be any trouble.
