You were not allowed to touch anyone because if someone gets injured the person injured can sue and can win for damages even if what was done was legal. There's a difference between holding someone against their will and removing someone from some place. If you suspected someone of stealing you can tell them to leave immediately and if they don't they are then trespassing. In my state and most others you can use force to remove someone who is trespassing.

I'm not a lawyer so I can't tell you the laws in every state but I live in a majority democrat state with some of the most strict gun laws in the entire country. In my state entering any car without permission to do so is trespassing so what she did was trespass. By law you're allowed to remove someone who is trespassing with physical force. This is not assault. He forcefully removed her from his car which is his property so he has the right to do so. This is no different than a bouncer at a bar or a security guard forcefully removing someone from a building.
