In my experience I've "fizzled out" much faster when I've tried to do small amounts each day than when I've done consistent sessions. I'll admit I've never done a bootcamp or even had a particularly reliable wing so I don't know what that's like. This is a easy gradual, consistent approach to approaching, like gong to the gym slowly. It's better to go to the gym twice a week and hit hypertrophy every time than to go every day and only do, say, 2 sets of 3 reps.

you should really consider doing 10+ approaches in a single session if you want to improve your skills and start getting lots of leads 2 a day is OK as an average but a bad idea to do consistently since the start of the session is always the hardest part (so if you're doing a handful of approaches every day and not doing longer sessions you're spending most of your time in field frustrated and rusty)

It’s more of a habit than a mindset in my view. Build the habit of talking to strangers in general. Then do progressive desensitisation exercises to help you talk to attractive women specifically until you can just open direct, and then work on skipping fewer sets. Just be consistent about taking the next step in your learning process rather than trying to force a change in mindset.

I don't think this is a good attitude to have. Whenever I feel like I am behind and running out of time I get impatient and then overwhelmed. There have been times where negative motivation pushed me a little bit to get started, either with approaching in general or fixing sticking pints / increasing volume, but in general you're going to need to rely on positive motivation more in the long run. You'll find a higher percentage of young people that genuinely go to church and such than in many other countries but other than that it's not too different. I read your examples, I would interpret 1 as high interest especially since you floated the date in a fairly non-committal way, she matched and exceeded your energy. Number 2 is hard to analyse because you were even more non-committal but there's still a chance she's down. I like social dancing but in my experience the effect it had on reducing approach anxiety was extremely minimal.
