I think you ought to bite the bullet and ask her if she wants to do anything sometime. ask her to do something on a non lesson day maybe; it seems like coffee is a good approach. either way the important part is asking her. he who dares wins. don't worry about it being awkward because like you said, you will probably never see her again if it doesn't work out.
