It is going to depend on a lot of different things. Are you both in the same group of friends? Are you able to just be friends after dating her? Are you happy to still / just be her friend after after dating her? You need to think about yourself first. Honestly, I reckon she’s only on bumble to boost her socials but stumbled across you and now she’s networking (especially considering how she mentioned going into management). Put her on the spot, wait for a lull in conversation and directly ask her out. No other questions, no other messages. That way you’re not giving her an out and you’re guaranteed a response, no reply = no, anything else will be self explanatory

In my experience, most older birds know exactly what they want and aren't afraid to go for it. You mentioned she is a co worker = high risk which, depending on the context, could be detrimental to you professionally if she rejects your advances. I'd keep doing what your doing, continue to make yourself an obvious option but let her make the first move
