I'm gonna say two things, and they might answer your question or they might not. Intentions. If you take a girl out on a date and like her, and you two decide to go out again, escalate physically (to show her you are interested) and then if you feel like there is some chemistry between you two, tell her how you feel. You didn't screw up: you were being honest, you were being you and that is what is important. If they got hung up on you not being in college, well, that's their priority, and you can move on. Honesty is the best policy in these situations. What if you lied and said you were in college? How long could you keep up the charade? Sooner or later you would have cracked and they would have been turned off.

"Risky" topics can actually be a good thing. They polarize people. You immediately know a lot about the other person, how they react when you disagree (don't agree with them because you think they want to hear it, if you genuinely disagree, say so, it can cause attraction). Don't stick to the "neutral" subjects because that's boring and won't polarize them. And you want polarization. It's key to weeding out those that aren't receptive to you and saves you time.

I can already tell you're over-thinking this--something that can mess with your mind. Don't stress over what to say or what conversations to have. That's actually a good idea. However, I don't think it can work in all situations. Some girls may be serious about "being friends" but others just use it as a way to let you down easy and have no intentions of actually being friends.
