I get not wanting to get married, since it is just a legal contract at the end of the day, but I feel sad for people who are so distrustful that they feel they can't ever live with someone.

I think there is a big difference between making sure you really know someone's character before marrying / moving in with them (and being aware of possible legal ramifications), and just never ever trusting anyone.
