Google videos by him (Jason Fung) I would also suggest IF or just plain fasting. Both reset insulin levels and insulin sensitivity. Longer fasts have benefits with autophagy and stem cells.

Just checking, but what do you consider to be healthy diet? Google search Perfect Health Diet -book, by Paul Jaminet. Also, if your man normally eats, say, 4000kcal per day and has corresponding weight, you cant feed him 2000kcal. It just doesnt work. When person is american style superfat, solution is to cook pretty much unlimited amounts of beef/lamb and bland potatoes, keep them in fridge and say to him to eat those every time he is hungry.
