People generally can't stay on the vegan diet long-term because of health issues, so even most ethical vegans and whatnot leave the diet. My only advice in terms of the issue you're dealing with is to make sure you can read women well for signs of dishonesty and instability. That's really the best you can do, and even a signed consent form may not be helpful.
