Are you on a bulk or cut? When I was losing weight years ago, 5x5 didn't do much beyond the first few weeks. On a bulk I actually saw results. As for your squats, practice range of motion and use a smith machine with safety bars for the first few weeks-- don't worry about the low weights. Another alternative that I used to do when starting out (and still do sometimes) is the leg press machine. Less risk of injury and works your quads pretty well.
