I think what happened is she misjudged your sense of humor, and didn't realize that you are also so insecure. She wasn't trying to be disrespectful. It was a joke. I would definitely apologize and hope that she is understanding, but personally I would have reservations continuing to see a guy who just immediately demanded that I get out over a simple joke.
