Sounds like it's time to find something to buy and check out with her so that you can make some small talk while she's checking you out... maybe after a few times of that you'd feel comfortable asking if she's available to grab coffee with you sometime.
I've been there a few times and tried small talk but I suck at it next time I see her my plan was to give her my number and ask if she wants to get coffee
