My interpretation is that she just slept for 47 hrs straight and she called in to work to take the 11 o'clock shift so she doesn't end up sleeping 48 hrs because she has no plans without going to work.

I think she's just showing of her narcolepsy skills.

I think this was a s**t test, either call her out (So you have two days off and the most fun thing you are capable of doing is sleeping), do not engage (literally say nothing), or show value (tell her what cool thing you'll be doing to do over the next two days). Basically, the worst thing you can do is offer to waste your time trying to chase her to entertain her.
