Option 1: say something next meet and end up with her or lose her (and it does seem more likely you’ll lose her given her previous answer and the “out of your league”)

Option 2: don’t say anything yet and have more time with her.

If you can’t stand to lose her company yet don’t risk it. Don’t heartbreak yourself. When I was in the similar position there came a certain point where I preferred that ultimatum. Don’t put to her as an ultimatum, just know what you’re risking by getting into serious talk instead of enjoying the date.
