I'll keep this as short as possible:

I met a girl at the club. We talk a bit, dance a bit, flirt a bit, and eventually I ask for her number. She goes "But I don't even know you" and I said "Well that's why we get lunch, to get to know each other." She happily agreed.

Fast-forward 2 days later, I setup the entire lunch date within 2-3 texts tops, no disagreement from her, she wants this to happen.

We meet up a couple of days later and it's fine, she's pretty late. Claims she's running on "miami" time, I tell her it just means she has to pay for the lunch, jokingly of course. She immediately says with a straight face "oh that's ok, I'm fine with splitting it" Joke went completely over her head...

We sit down, and this girl can talk. A lot. We connect on a few things, and I'm making her laugh, but I found myself losing grip on the date as time went on. It wasn't awkward, it was just like I wasn't fully participating at points. I was definitely confident throughout, and maintaining strong eye contact, but she was doing most of the talking. Date ends and she happily offers to drive me back to work as I was on an extended lunch break (I took a leisurely stroll to the restaurant). We hug in the car and I say to keep in touch over the weekend kind of deal.

Just to note: I'm not overly interested in this girl (date just wasn't ideal as you can tell), I'm just using this as a learning experience. Although something is intriguing about her.

So I did text her saturday night to see if she was coming into the city (she lives like 15-20 mins away) at like 7pm. No response, until 3 AM. Said she went to a music show that her friend was playing at, and was sorry for the late response. I immediately teased her about being late once again, and she laughs excessively.

I'm assuming the 3AM textback was interest in keeping me in her back pocket while not wanting to do anything that night. I'm definitely not a push-over, but I'm a bit of a nice guy at points. Definitely starting to wiggle into that back pocket, but I'm not quite there yet. I haven't said anything since that weekend text, and I don't want to do another lunch, but part of me is interested is seeing her again.
