There's a body language theory that someone who is playing with their wedding ring is subconsciously projecting his desire to escape from his marriage and have an affair with you.

I'm not sure whether to believe this or not. It could just be a nervous habit and he does it constantly, even when he's alone. Maybe try to observe him from a distance and see if he does this when he's not near you.
