A good followup conversation helps, where you exude confidence and optimism about her and demonstrate your masculine authority without being a creep.
On the 2nd date treat her like you have known her forever, it eliminates whatever is left of any awkwardness and she will feel very impressed at you. Also don't eyeball other chicks on the 2nd date, keep your attention focused on her.

Yes, memory and recall is very important. Its an indication you are listening to her and care about what she says. Women are so used to guys ignoring what they say they are happily surprised when they deal with a guy that remembers she liked something they discussed about a week ago (aka like a certain type of flower, and then he gets her those very same flowers as a gift).
