Your have a very limited time to make an impression so don't try to close on the first encounter.

You need return customers. Be a really good employee. Positive affirmation of purchases "that's my favorite thing we have". Come up with a secret menu of combos and add-ons. Remember names. If they're carrying a bag mention something you just bought there. Make them feel special so every time they go to food court they will buy at your place because you are there. Once they are regulars then bring up topics and interests outside the mall.

Downside: you're locked to a cash register for your shift. Prime target for clingers.
