Oh no her eyes are beautiful, and I was complimenting her about them, not in a corny scripted way, but they were genuinely mesmerising. So actually, I was trying to get at that almost, show her that I was interested in her profile picture.
But I don't think this was very relevant to her confusing behaviour.

maybe she's playing hard to get or she's just really bad at texting. i (f26) am too bad at texting and oftentimes i will forget to answer but i have no problem double texting or showing my interest. so it could be this

Honestly, I think she doesn’t know how to respond to your messages. It’s confusing that she left you on read, but it doesn’t seem like she did it with any sort of malintent. Do you normally start the conversations? Does she start any conversations/greet you?

Well she has now responded to my text, I saw some pictures of the food she was cooking and said I loved it and asked her if she would cook me some.
She was like 'oook what will you cook for me? 😅'
So I think she is interested because she is engaging in the conversation and trying to move it towards me actually coming over for dinner.
I replied talking about what I'll cook her for breakfast, subtly establishing premise that I will spend the night with her. But honestly, I have no idea how she will react to that, or if she wants to but just doesn't know how to.

Maybe next time, instead of asking if she would cook for you, you should just compliment her cooking.
You might want to avoid giving “subtle premises”. It could come off or give the impression that you have hidden intentions, which will definitely scare her off.

She has already told me that she wanted to cook for me before, and we were flirting.
I think I should clarify, I said 'Don't worry, I'm going to cook you an English breakfast, it's very unhealthy, you're going to kill me'.
If you don't know, English breakfast is really a dish, and it can be eaten any time, not just breakfast. But the word 'breakfast' can sprinkle the right feelings into the air, while giving plenty of plausible deniability.
She's Italian and Italians are renowned for their healthy diet so 'it's very unhealthy, you're going to kill me' is just me joking about how caloric it is, so the humour helps too.
