I've been around these women all my life.

They are women all the same, they value alpha male qualities and will shit-test you to evaluate you. (although it is much easier to maintain frame with them pre-LTR) Women like that will next you if you are too "bad". Basically you have to decide what you are dating her for, LTR, or a plate. If she is legit with her morals, don't bother with her if you are looking for a plate. You will be wasting your time.

Does she think you're a co-religionist? If not, know she's only dating outside the fold becuase she's started to doubt (maybe even subconsciously) or if she's decided that the men within it are mewling betas. If the former, you can't rely on her to maintain any of this attractive conservatism. If the latter, her depth of conviction is low or she'll very quickly retreat when she realizes that dating a regular guy means being surrounded by impurity and having sex at least at first without commitment, to say the least of marriage.

How old are you? How much plate-spinning have you done?

I always thought I wanted the LTR, but then spent a few years spinning, and loved it. Then did the LTR again.

Now I'm in my mid thirties, and I don't know if I want to keep spinning or settle down again. You sound like you're younger. I'd consider spinning a while yet, lest you get bored. You can always prowl the church crowd when you get older and tired of The Game.
