You're making good points, but you're not quite right about aspartame's toxicity. http://www.snopes.com/medical/toxins/aspartame.asp And not all sugar substitutes will cause an insuline spike. I've tried them all, and so far the only one I think that has caused one on me (and I do keep track of these things daily) is sorbitol. Aspartame, Splenda, Xylitol, Truvia, Stevia have not had that effect on me, but It really just seems like it depends on the person.
