Most people put on the 5.3 tank from Acerbis which gets you about 250-280 miles. There is a 7gallon I think, but the bike gets very top heavy with that much fuel. Idk many (if any) dual sports that can go 500 miles on one tank. I think you're looking for something more like a touring bike. This bike is mostly for being able to handle rough terrain, it isn't particularly the best for very long freeway trips, although it's not bad either with a windscreen.

Absolutely. I've taken her up some very gnarly hill climbs around me already and it handles basically anything I've thrown at her so far. Tires go from 20/80 street/dirt to the opposite, so just pick what you'll be riding most. 60/40 street/dirt or vice versa can handle most fire-roads and beat up logging trails with ease. You'll want a windshield upgrade for long freeway trips.
