Im trying to figure out if you're bulking, cutting or maintaining. At 6' 165lbs I would be bulking. If you want to increase your lifts you have to put on some mass. Also why are you not squatting? Any asshole can load plates and plates on a leg press and feel cool. Biggest ego boost machine out there, especially if you're doing partial reps which most people are. Not sure if you've worked out your BMR/TDEE to get to the 1820 cals. If that fits in your ideal deficit, that's great. I recommend reading Bigger, Stronger, Leaner. Track your food. You can do any diet you want, eat as many or few meals a day as you want, it ultimately comes down to Calories In Calories Out... just find a system that you can adhere to and track everything that you toss into your mouth.

It's better to just take a week of OYS in a case like this... Aside from feeling guilty that your recovering wife had to watch 2 kids for the week, and doing some stretches, you have stated nothing. Also, when your child is sick or hurt, you really don't need 2 over emotional adults running around panicking (which is what most women do). I personally wouldn't start bulking until you are down to at least 15% BF. I would suggest going down to as low as 12% then bulking back up to 15%. If you do start a bulk at 15% I'd recommend going up about 2-3% then down 3-4% then reset to eventually bring it lower. (15%>18%>14%>17%>13%>16%>12% etc.) When you hit 12% you'll like what you see a lot more and not worry so much about what MRP guy say about your lifts. If you have the discipline you will will be pushing more weight at lower BF.

3x3 is from stronglifts 5x5. You start with 5x5 then go to 3x5 then 3x3. That's where I stalled out and went to Wendler 5/3/1, then ultimately BLS which is more hypertrophy that the other programs which are all powerlifting only.

I found I plateaued pretty quick in the 4-6 range, when adding weight immediately every time you hit the 6 (not waiting until next workout to add weight). My problem is when I deload I catch back up to the plateau weight so quickly I don't benefit from the deload. I have upped my protein intake to minimum 160g per day. Keeping my calories to average of 2464 per day while still cutting. I read Bigger Leaner Stronger last week and bought in to the diet advice, lifting program. I also bought some of the supplements from them, waiting for delivery. My bad I used 1500 instead of 3500 per lb so you are correct. I weigh myself 4 days a week (right after workout, pretty much the same time every day). I then take the average of that because it goes up and down about 3 lbs at any given time. I have a spreadsheet that I track my weight and BF% and then breaks it out I to lean mass and fat so I do watch those. I am using a digital scale so I know it's not the most accurate but I kind of look at the trend more than the number.

My teeth have started to hurt, I noticed that I grind them when I lift, and sometimes I forget. I need to stop. If it's bad enough you may want to consider a mouthguard, you can get hairline cracks in your teeth. I wore one for a while but then I found it started affecting my breathing. I now focus on keeping my core tight and jaw loose, I've found that somehow redirecting the pressure elsewhere helped.
