I want to clarify that I think you're right in that you should wear an engagement ring you love. And I don't think it's wrong for you to be concerned about your MIL's involvement in this. BUT I do think maybe you're overly concerned with the terrible MIL stereotype that's so popular online. I also think you could have handled the whole situation with more grace. I would just say "I can't." Figure out the tasks you can handle and stay on top of those, plus maybe a little more. Delegate what you can't do to your husband. If he complains, say "My next day off is Wednesday, I can do it then." Make a sticky note to do whatever task on Wednesday, and do it on Wednesday. You should absolutely be putting in 110% effort here but beyond that, it's totally valid to just say "I'm not able to add that to my workload."

I (personally) think you were overreacting. I feel like him keeping busy is pretty much exactly what FDS tells us to do. At the same time, his response shows you exactly what kind of guy he is.
