Yesterday I had an arugula salad with shredded beets and carrots, spicy couscous and feta. If I liked dressing I would have made a vinaigrette. Tonight I am making either stirfry (veggies in a pan with thai salad dressing as a sauce), or red curry. Curry is so easy, all you need is veggies, coconut milk, and green or red curry paste.
