I think the question is what if there are societal incentives created that education doesn't solve? I think most people at this point know sugar is not good for you. But sugar tastes really really good, and eaten at the macro level mean the US leading cause of death is obesity/heart disease. There is the assumption I think, that humans are logical animals.
