Because actually doing the 180 takes serious effort. Effort to unlearn all the stuff holding one back, and to spend more time doing things that may not yield instant gratification (learning new skills and hobbies, lifting, saving and investing money). Keep protein intake high, but don't slash the fat as much as carbs. You still need energy to perform well. Also, eat only when you are hungry. From personal experience, you can start seeing changes in yourself after the first six months to a year after you start lifting and eating properly. But you'll have to find out what works for yourself. Every workshop floor I've ever being in has been 100% staffed by men.
